The Perfect Vinaigrette

The Perfect Vinaigrette

A beautiful salad deserves an equally beautiful dressing, and once you learn the simple formula for a classic vinaigrette, you’ll never need a bottled dressing again. At The Fancy Pantry, we love teaching our customers how easy it is to create fresh, flavourful vinaigrettes using high-quality ingredients that you may already have in your pantry.

During our last culinary workshop in February at The Fancy Pantry, guests discovered that making a vinaigrette is one of the simplest ways to elevate everyday meals. With just a few ingredients and a basic formula, you can create endless flavour combinations for salads, roasted vegetables, grain bowls, or marinades.  We are sharing a few ideas here for you...

The Classic Vinaigrette Formula

The secret to a perfect vinaigrette is balance. The traditional ratio is:

3 parts oil to 1 part vinegar

This creates a smooth dressing that isn’t too sharp or too heavy. The oil softens the acidity of the vinegar while carrying the flavours of herbs, garlic, or mustard.

Basic Vinaigrette Ingredients

  • 3 tablespoons good quality olive oil
  • 1 tablespoon vinegar
  • 1 teaspoon Dijon mustard (optional but recommended)
  • 1 small clove garlic, finely minced
  • Salt and freshly ground pepper
  • Optional: a drizzle of honey or maple syrup

Simply whisk everything together in a bowl or shake in a small jar until the dressing emulsifies and becomes slightly creamy.

At The Fancy Pantry, we always recommend using a high-quality olive oil and a well-balanced vinegar to achieve the best flavour.

Choosing Your Ingredients

One of the easiest ways to elevate your vinaigrette is to use quality oils and vinegars. A good olive oil adds richness and body, while specialty vinegars bring bright, complex flavour.

At The Fancy Pantry, we carry a selection of premium olive oils and vinegars that are perfect for making homemade vinaigrettes.

Try combinations such as:

  • Olive oil + balsamic vinegar + honey for a classic sweet and tangy dressing
  • Olive oil + red wine vinegar + garlic for Mediterranean flavour
  • Olive oil + apple cider vinegar + Dijon for a bright everyday vinaigrette

You can also experiment with fresh herbs like basil, parsley, or thyme for added freshness.

Flavor Variations to Try

Once you master the base formula, you can get creative.

Lemon Herb Vinaigrette

  • Olive oil
  • Fresh lemon juice
  • Dijon mustard
  • Chopped parsley

Maple Dijon Vinaigrette

  • Olive oil
  • Apple cider vinegar
  • Dijon mustard
  • Maple syrup

Garlic Balsamic Vinaigrette

  • Olive oil
  • Balsamic vinegar
  • Garlic
  • Honey

Each variation keeps the same 3:1 ratio, but the added ingredients create entirely different flavour profiles.

Tips for the Perfect Vinaigrette

  • Always taste and adjust seasoning before serving
  • Use fresh ingredients whenever possible
  • Shake or whisk just before serving, as vinaigrettes naturally separate
  • Let the dressing sit for 5–10 minutes so the flavours blend

Why Homemade Is Better

Homemade vinaigrettes are fresher, healthier, and far more flavourful than store-bought dressings. They contain no preservatives, less sugar, and allow you to control exactly what goes into your food.

At The Fancy Pantry, we believe that simple techniques and quality ingredients can transform everyday cooking into something special.  Mainly, have some fun and try some new flavours - they may become your new favourites.
